The original Dark Souls still holds up great after all this time and is worth a try, even if the difficulty might scare some players away at first. The game is hard, you will die and you will run in to roadblocks along the way on your first playtrough, but I find the challange the game offers to be fair. Especially now that most people have an idea of what type of experience they are in for when starting the game. Dark souls 1 still impresses with it's gameplay and overall level design, having an almost metroidvania-esque feeling to the interconnected world. Exploring the world is a blast in itself and rewards you plenty with secrets to find and just the joy of exploration in itself! Give it a try : )
